Colombia - Honey Mountain
Summary
A single-origin Colombian coffee from Tablón de Gómez in Nariño, grown by over forty smallholders on volcanic soil above 1,850 metres. The coffee undergoes a honey process: after 48 hours of fermentation, the beans dry in the sun with a layer of fruit flesh still attached, then rest in Buesaco for thirty days before milling. Roasted light, it offers notes of red fruits, apple and honey. Filter brewing highlights the fruit, while espresso produces a sweet, full-bodied shot.
