Colombia Papayo María Belén Díaz is a specialty coffee from the Huila region of Colombia, produced by María Belén Díaz at the Resinas farm. This lot is part of the Huila Condor Project, supporting women coffee producers. The coffee undergoes an extended fermentation washed process: 36-hour pre-fermentation in cherry, 36-hour fermentation in mucilage, two-stage washing, sun drying on canopies for 12 days, and stabilization for 15 days. Flavour notes include panna cotta, pumpkin, physalis, clementine, melon, and vanilla. Grown at 1800 meters above sea level, this Papayo variety offers a complex and expressive cup profile.
