An experimental coffee from Elkin Guzman's farm El Mirador in Pitalito, Huila, Colombia. Catiope and Bourbon cherries were anaerobically fermented for 60 hours, then co-fermented with a culture of brown sugar, panela, and tropical yellow fruits for another 270 hours, washed and sun-dried on raised beds. Bright and sweet tropical notes of passionfruit and lychee with soft apricot sweetness.
