Summary
This coffee comes from the La Piragua farm in Palestina, Huila, Colombia, produced by Arley Vargas and his father Alexander Vargas Osiris. The variety is Striped Red Bourbon, a natural mutation of Bourbon with distinctive red and orange striped cherries. Processed using a double-fermentation technique: 72 hours aerobic fermentation followed by 98 hours anaerobic in sealed barrels, then dried in sheds for 15-20 days. The cup is sweet with vibrant acidity, featuring notes of forest fruits, red grapes, and toffee.
