Summary

A single-origin Colombian coffee from La Miel farm in San Agustin, produced by Miguel Balboa, featuring the Wush Wush variety grown at 1,850 m. Ripe cherries are sorted by size and colour, then fermented in a bioreactor under strictly limited oxygen with staged inoculation of farm-isolated microorganisms, monitoring temperature, oxygen, pH, sugar and alcohol throughout — a method the farm calls Dynamic Natural. Fermentation lasts up to 300 hours, followed by three days of sun drying and nearly 30 days on shaded African beds. The cup shows citric brightness, juicy red fruit acidity and vinous depth.
