This coffee comes from Finca Milan, a farm in Risaralda, Colombia, run by Julio Cesar Madrid. Grown at 1,600 meters on volcanic soil, the Caturra variety undergoes a special Nitro Washed process: after pulping, the coffee is fermented in a sealed bioreactor with coffee pulp juice and watermelon, with nitrogen injected, and temperature, pH, and Brix carefully controlled.
