This microlot from Colombia's Huila region is processed by Aroma Nativo, a team led by Luis Marcelino that sources cherries from top producers and applies precision fermentation design. Featuring the rare Aji variety (genetically closer to Ethiopian heirloom despite its name), which gained attention after the 2021 Cup of Excellence. The Hydro Honey process includes hand-picking, controlled anaerobic fermentation, pulping, drying, rehydration fermentation with selected yeast and bacteria, and raised bed drying. Cup profile: tropical fruits, jasmine, white peach. Light roast with clarity and refinement.
