Avelino Mena 19: Primejaw T-rex Lore
Summary
Single-farm Colombian coffee from Avelino Mena's one-hectare Finca El Guadual in Vereda La Linda, Santuario, Risaralda. Grown with Colombia, Caturra and Supremo varieties. The 19-day expression of a remonta washed process: 12-24 hour in-cherry fermentation, then pulping and sealed-barrel anaerobic fermentation rotated every 24 hours, reaching 19 days, followed by about 8 days of roof drying. Deeper and more layered than the shorter 10-day timeline, with cola and sarsaparilla beside fig, vanilla, aguapanela and subtle rum, lifted by lime zest. Clean, structured and fruit-forward with a long finish.
