Summary
This coffee comes from the Reforest Project in the northern Tolima and South of Caldas regions of Colombia, grown by local producers near El Vergel Estate in Fresno, Tolima. The Caturra variety undergoes a natural process with a 36-hour anaerobic pre-fermentation in GrainPro bags, followed by 96 hours of fermentation in hermetic tanks at about 23°C, and around seven days of mechanical drying before resting for 30 days. The cup is characterized by cocoa, cherry, citric acid, tropical fruits, blueberry, and green apple.
