Grown at 1750 MASL, the Ombligon variety undergoes 36 hours of limited oxygen fermentation followed by approximately 20 days of raised-bed drying. The cup profile features notes of cherry, chocolate ganache, pomegranate, and candy, with layered sweetness and intense fruit-forward characteristics. This microlot earned a cup score of 88 and was used in the World Barista Championship finals in 2023. Roasted dark (Agtron #78.2) on a Diedrich CR-35, it is suitable for both filter and espresso brewing.
