Summary
Colombia Nestor Lasso Ombligon is a naturally processed, anaerobic fermented coffee from producer Nestor Lasso of Finca El Diviso in Huila, Colombia. Grown at 1750 MASL, the Ombligon variety undergoes 36 hours of limited oxygen fermentation followed by approximately 20 days of raised-bed drying. The cup profile features notes of cherry, chocolate ganache, pomegranate, and candy, with layered sweetness and intense fruit-forward characteristics. This microlot earned a cup score of 88 and was used in the World Barista Championship finals in 2023. Roasted dark (Agtron #78.2) on a Diedrich CR-35, it is suitable for both filter and espresso brewing.
