A single-origin coffee from Finca La Negrita, located at 1,800m on the volcanic slopes of Nevado del Tolima in Colombia. Produced by Mauricio Shattah, the farm preserves 90% of its land as native rainforest while cultivating rare varieties including Pink Bourbon. This lot underwent Anaerobic Natural processing with 36 hours of limited oxygen fermentation followed by approximately twenty days of raised-bed drying. Flavor profile features pink guava, green apple, caramel, and watermelon candy. Cupping score of 87.5. Roasted to a moderate (medium) level on a Diedrich CR-35, suitable for both filter and espresso preparation.
