
Colombia Nestor Lasso - Anaerobic Washed
Summary
Single-origin coffee from Pitalito, Colombia, produced by Néstor Lasso. Variety is Improved Typica (Typica Mejorado), a cross between Bourbon and an indigenous Ethiopian variety. Washed process with anaerobic fermentation and thermal shock: selected cherries (70% deep red, 30% pink) undergo oxidation, anaerobic fermentation in tanks at 14–20°C, a submerged fermentation at 28°C, then a hot-water quench at 50°C, sun drying and dehumidifier drying. Sensory notes include strawberry, orange blossom, jasmine, rose, lavender, citrus and red fruit, with a floral, expressive cup comparable to Geisha.
