Single-origin Colombian coffee from the Gasca Brothers in Bruselas, Pitalito, Huila. Grown at 1,550–1,800 m above sea level, this lot is the Pacamara variety, a cross between Pacas and Maragogipe created in 1958. The washed process involves anaerobic fermentation: ripe cherries are oxidized for 48 hours, fermented anaerobically for 60 hours, pulped, fermented again for 60 hours with mucilage, then quenched with hot and cold water and dried in the sun followed by mechanical drying. Cup profile shows red apple, stone fruit, and nutmeg.
