The cherries are fermented in bags for 72 hours with regular turning, then slowly dried in thin layers with natural airflow to keep the cup clean. Cultivars include Castillo, Caturra and Colombia, grown at 1700-1900 masl. The result is a bright, clean natural coffee with watermelon and gold kiwifruit flavours, balanced kiwi and goldenberry acidity, medium acidity and low body.
