Costa Rica Black Honey Don Mayo
Summary
A Costa Rican microlot from the Bonilla family farm in Leon Cortez, grown at 1850 masl from 100% Catuai. The coffee undergoes a Black Honey process: selectively harvested ripe cherries are rested in jute sacks for three hours for initial fermentation, then depulped with 100% of the mucilage retained and dried on raised beds, raked for even drying. This yields a subtle fruity profile, less intense than a full natural. Roasted medium light with notes of black cherry, toasted marshmallow and nutmeg.
