A rare coffee from producer José Herman Salazar's farm La Guaca in Pitalito, Huila, Colombia. The Ají variety was discovered by José on his farm and isolated for its distinct sweet red pepper aroma. This lot achieved 6th place in the Colombia Cup of Excellence. Genetic testing revealed it to be a first-generation offspring from Ethiopian wild coffee forests, similar to Gesha. Processed using anaerobic washed method at 1798 MASL. Tasting notes of blackcurrant, toffee, and vanilla.
