Summary

Ethiopian coffee from Guji, produced by around 50 smallholder farmers delivering ripe cherries to the Bishan Wate Washing Station near the Wate River. Ethiopian heirloom variety grown at 1900-2350 masl. Special Prep washed process: cherries are floated, depulped and washed, followed by a 48-hour fermentation, then dried on raised beds for about 21 days to 12% moisture. A "Premium" preparation day lot, selectively harvested and sorted for ripeness. Layered and intense cup with bergamot, candied orange and hints of chamomile; very sweet. Roasted for espresso.
