
Julio Cesar Madrid – Finca Milán – Maypop Cultured Washed
Summary
This light roast coffee comes from Finca Milán, a farm near Pereira in Risaralda, Colombia, owned by third-generation producer Julio Cesar Madrid. The lot is made up of Caturra and Castillo varieties grown at 1,600 meters above sea level. It undergoes a Maypop Cultured Washed process: cherries are held in bags for 10-12 hours, cooled, depulped, then fermented anaerobically for 6-8 days with maypop, passionfruit, curuba, selected yeast and bacterial cultures. After washing, the coffee is dried for 25 days in the sun and 5 days mechanically. The cup is bright and layered with orange blossom aromatics, strawberry sweetness, soft peach finish, medium body and medium acidity.
