Colombia Nativo Nogales – Caturra Natural + Mosto
Summary
A light-roast Reserve release from Los Nogales farm in Pitalito, Huila, Colombia, grown by the Hernández family at 1,750–1,950 meters. This Caturra coffee undergoes Natural + Mosto processing: ripe cherries are density-sorted, given a thermal shock treatment of 80°C for 20 seconds followed by rapid cooling, then fermented anaerobically for 96 hours with a mosto starter of pre-fermented liquid from an earlier batch of the same variety, before mechanical drying for two to four days and 15 days of stabilization. Berry-like aromas in the dry grounds lead to sweet citrus and peach in the cup, with mild acidity, brown sugar sweetness and a pleasant finish. Sourced through Forest Coffee.
