Flavour profile features candied orange, vanilla, and caramel notes. The 14-hectare El Libano farm has been in Jhon Jairo's family for 28 years. Selective hand-picking is followed by 24 hours cherry fermentation, 48 hours post-pulping fermentation, then washing and drying on raised beds for 20-30 days depending on weather conditions.
