Colombia - Watermelon Co-ferment
Summary
Colombia - Watermelon Co-Ferment is a single-origin coffee from Finca El Placer in the Quindio Department of Colombia, produced by Sebastian Ramirez using Castillo cherries. Freshly picked cherries undergo 120 hours of anaerobic fermentation with wine yeast, then are de-pulped and fermented another 72 hours with dehydrated watermelon, fruit glucose, and CO2. In the cup it shows watermelon candy, peach rings, sweet tea, and a hint of lemon cookie.
