This coffee comes from the Asosatus group, an association of 60 coffee-growing families in Pitalito, Huila, Colombia. The producer is Aldemar Satus. The variety is Tabi, grown at 1500 meters above sea level. The coffee undergoes a washed process: after manual harvesting, the cherries are floated and oxidized in tanks for 48 hours before being pulped. Drying takes place on patios for 12 days in a thicker layer than usual, with constant raking to add complexity. The cup is characterized by notes of yogurt, peach, and butter. Recommended for both espresso and filter brewing.
