Summary
A single origin microlot from Finca Maracay, a family-owned farm in Armenia Quindio, Colombia, run by Luz Helena Salazar. The coffee is of the Castillo variety, grown at 1550 meters altitude. It underwent a 72-hour anaerobic co-fermentation with wine yeast and lulo (naranjilla) fruit, then dried on raised beds. The result is a rhubarb-forward coffee with notes of lemon balm, lulo and rhubarb, lightly herbaceous with an elegant flavor profile.
