Summary
A specialty coffee from Risaralda, Colombia, produced by Julio Madrid & Julio Andrés Quiceno of Uba Farms. The Sidra variety was grown at 1700-1800m altitude. Processed via co-fermentation on culture with fruits, microorganisms and oils in a bioreactor for 72 hours under low-oxygen conditions, followed by sun drying and mechanical drying. Tasting notes include raspberry, brown sugar, cherry, lemon, strawberry, and a hint of vanilla. This coffee reflects innovative post-harvest techniques while respecting the unique terroir of the Risaralda region.
