Colombia Jhon Didier Trujillo Chiroso Washed
Summary
Single-origin washed Chiroso from Jhon Didier Trujillo's 3.5-hectare Villa Flor farm near the Penderisco River in Urrao, Antioquia, Colombia, grown at 1,950 MASL. The lot is layered and honey-sweet with bright lemon acidity, blackberry and raspberry, and a buttery, custard-like finish. Chiroso is prized for floral, tea-like delicacy, but this lot brings unusual weight to the cup — a buttery body and lingering dulce de leche sweetness beneath classic citrus and berry brightness. The cool, humid microclimate beside the river slows cherry maturation and gives consistent fermentation conditions.
