Colombia Finca Milan Culturing Nitro Caturra
Summary
A light-roast coffee from Finca Milán, a family-owned estate in Pereira, Risaralda, Colombia, led by third-generation producer Julio César Madrid Tisnés. This lot is processed using a signature 'Nitro Washed' fermentation: after pulping, the beans ferment in a sealed bioreactor with fruit must and starter cultures under a nitrogen-purged, oxygen-free atmosphere, with temperature, pH, and Brix monitored in real time. The cup is clean and fruit-forward with a creamy body, featuring cantaloupe, raw pineapple, and bright lemon zest. Grown at 1,600 MASL, the farm is known for experimental processing and has won medals at the World Barista Championship.
