Kolumbia Quebraditas Chiroso
Summary
Specialty coffee from the Quebraditas project in Oporapa, Huila, Colombia, grown at 1850 m by Edinson Argote and Ángela Rojas. The Chiroso variety is processed anaerobically: ripe cherries are sorted in water, oxidised for 12 hours, dry-depulped with minimal water, fermented aerobically for 48 hours, given a 45 °C thermal shock, then mechanically dried for 76 hours and stabilised in GrainPro bags. In the cup it shows a delicate oolong tea structure with sweet peach, creamy smoothness and floral jasmine and elderflower notes.
