Summary

Single-origin Colombian coffee from Nariño, produced by Huver Castillo, a third-generation grower, from his shade-grown farm El Paseo on the slopes of Buesaco at 1,750–1,950 masl. The Caturra lot, dubbed "Rocket Flower," undergoes an experimental washed process: a 36-hour cherry pre-fermentation, a sea salt floating bath, then a six-day anaerobic fermentation in stainless steel tanks enriched with its own leachates and profile-enhancing enzymes, followed by gentle mechanical drying below 38°C and a 15-day stabilisation. Flavour notes of parma violet, green tea and gummy bear.
