Ascend - Colombia
Summary
Single-origin Colombian coffee from El Diviso farm in Pitalito, Huila, produced by Néstor Lasso with his brother Adrián and Jhoan Vergara at 1,750 masl. The Bourbon Ají lot is processed using an advanced natural method: handpicked cherries undergo 24 hours of open-air oxidation, followed by two separate 48-hour anaerobic fermentation stages in sealed tanks and bags, a controlled thermal shock to lock in aromatics, 15–20 days of solar drying and a 20–30 day resting period. Expect notes of peach rings, elderflower and muscat grapes.
