Summary
Single-origin coffee from Carmen Montoya's Bella Vista farm in Urrao, Colombia, grown at 2,000 meters above sea level. Produced from the Chiroso variety, it undergoes a multi-stage washed process: 12-hour whole cherry fermentation, depulping, 72-hour fermentation in stainless steel tanks, washing, and 8-day patio drying. Roasted light, it offers a dense, layered cup with peach, mandarin, and caramel candy notes.

- 1.Bloom with 2-3 times the coffee weight (45-60 g for a 21.5 g dose). (1:00)
- 2.Pour 2-3 controlled center-out pours.
- 3.Avoid heavy swirling or stirring.
- 4.Let it draw down naturally with a light rattle after the last pour.
Water: 30-80 ppm TDS, moderate alkalinity, balanced calcium/magnesium. Rest coffee 2-6 weeks off roast for filter.
