Artist Reserve: Ethiopia Gotiti
Summary
Single-origin washed Ethiopian coffee from the Gotiti Washing Station in the Gedeb woreda of Yirgacheffe, built in 2023 and supplied by 868 neighboring smallholder farmers. Variety 74158, grown above 2,000 meters under native shade trees on plots of 0.1–2 hectares. Cherries are depulped, traditionally fermented, fully washed and dried slowly on raised African beds. Light roast with an intensely floral, elegant cup: jasmine, lychee, bergamot and white grape. Released as part of the Artist Reserve series with original artwork by Anthony Oilhack.

Rest 4–6 weeks off roast. Longer shots are fine if they stay sweet and structured. If thin, grind finer or increase ratio; if harsh, coarsen or lower temperature slightly.

Ratio 1:16.75Grind: medium-fine for most flat-bottom / hybrid brewers
- 1.Bloom with 2–3x coffee weight (45–60 g for a 21.5 g dose) (1:00)
- 2.2–3 controlled center-out pours
- 3.Avoid heavy swirling or stirring
- 4.Let it draw down naturally with a light rattle after the last pour
Water 30–80 ppm, moderate alkalinity, balanced calcium/magnesium; filter out chlorine and sulfur. Target extraction yield 20–23%, TDS 1.35–1.55. Rest 2–6 weeks off roast, sweet spot 3.5–6 weeks.
