This lot is entirely Yellow Pacamara variety, processed with advanced fermentation including 60 hours of initial oxidation followed by 92 hours of submerged anaerobic fermentation with fermented Pacamara mosto, then sun-dried for 16 days. Flavour profile includes Jolly Rancher, tropical fruit, dark chocolate, lime leaf, passionfruit, tarragon, citrus, purple grape, mango, and chocolate ganache.
