
Mil Cumbres Pacamara Natural
Summary
A single-origin Pacamara coffee from Mario Fonseca's Mil Cumbres farm in Paraiso, Volcan, Panama, on the slopes of the Baru Volcano. Harvested at 1750-1800 meters, the cherries were floated, pre-dried for 24 hours, and fermented in airtight tanks for 28 hours with periodic nitrogen infusion before drying for 25-30 days. Flavour profile includes lemondrop, hard candy, orange/lemon zest, white pepper and deep sweetness. The roaster recommends at least ten days of rest from roast date.
