Summary
Colombia Misak is a washed Arabica coffee from the Cajibio region in Cauca, Colombia, grown at 1700-1900 meters above sea level. The coffee is produced by Don Néstor and his family, members of the Misak indigenous community, who follow traditional practices in harmony with nature. The process involves manual harvesting of ripe cherries, an 18-hour oxidation, manual pulping, a second oxidation in water-filled tanks, washing, and drying in a greenhouse for about 10 days. The varieties are Caturra and Castillo.
