The Castillo variety is grown at 1300 MASL in Villamaria, Caldas. The cherries are hand-picked, undergo dry oxidation, pulping, and washing, then are dried with micro-pulverized passion fruit added for flavor. The cup offers purple passion fruit, unrefined brown sugar, and physalis, with vibrant intensity and elegant acidity.
