This lot is a Topázio variety, processed with an experimental washed method involving multiple controlled fermentations: aerobic dry fermentation for 61 hours, thermal shock, anaerobic dry fermentation for 200 hours, pulping, and anaerobic fermentation in water for 124 hours, followed by mechanical and raised-bed drying. Flavour notes include lemongrass, caramel, and lemon meringue.
