Ladon | Apple Co-ferment
Summary
A Colombian coffee from El Vergel Estate, combining Caturra and Colombia varieties grown by producers across Huila, Tolima and Caldas. Cherries are selected by harvest season and processed at El Vergel Estate with a 48–72 hour anaerobic honey fermentation in stainless-steel bioreactors using red apple and Lactobacillus cultures, then patio-dried 3–6 days, finished in mechanical silos and stabilised for 20 days. The cup is sweet, creamy and dessert-like, with notes of apple strudel, vanilla ice cream and white chocolate.
