Celeste | Mosto Fermented
Summary
Celeste is a Colombian single-origin coffee from Finca Los Nogales in Pitalito, Huila, grown by the Hernández Family under Oscar Fernando Hernández. The Caturra lot is natural + mosto processed: cherries are density sorted, given a thermal shock, then fermented anaerobically for 96 hours with a pre-fermented mosto culture rich in native microorganisms, followed by slow mechanical drying and extended stabilisation. Roasted for filter, it shows a vibrant, juicy profile of white peach, watermelon and kiwi, lifted by orange blossom florals and a clean, expressive finish.
