Celeste | Mosto Co-ferment
Summary
Celeste is a single-origin coffee from Colombia, grown by the Hernández Family at Finca Los Nogales in Pitalito, Huila. The coffee is of the Caturra variety and undergoes a natural + mosto fermentation process: after cherry selection and thermal shock, it is fermented anaerobically for 96 hours with a pre-fermented mosto culture, then slowly dried and stabilised. The cup profile is vibrant and juicy with notes of white peach, watermelon, kiwi, and orange blossom. Roasted exclusively for filter.
