Colombia Los Pinos
Summary
A single-farm Colombian coffee from Los Pinos, farmed by first-generation producer Sergio Caro in Caicedo, Antioquia, at 2390 m. The Chiroso variety — an Ethiopian landrace related to Gesha and Sidra — is hand sorted, rested 24 hours, then anaerobically fermented in sealed barrels for three days, depulped and fermented a further three days with musto (cherry juice), softly washed and dried on raised beds for 7–10 days. Intensely fruited and elegant, with blackberry, ripe white peach and vibrant blood orange acidity.
