Colombia El Mirador Huila
Summary
Colombia El Mirador Huila is a specialty coffee from the Huila region of Colombia, produced by Elkin Ferney Guzman Vargas at Finca El Mirador. The coffee is of the Catiope variety, a cross between Caturra and Ethiopian lines, and is processed using an Acetic Natural method. This involves fermenting the coffee cherries in oxygenated water with aerobic bacteria for 10-12 days, followed by drying on shaded raised beds for 25-30 days. The cup profile features fermenty, pineapple, and ripe grape notes.
