Colombia Carambolo
Summary
This HCS regional coffee from Colombia undergoes a unique double fermentation process, first aerobic then anaerobic, resulting in an exceptional profile. The initial oxygen contact develops character, while the extended anaerobic immersion highlights stone fruit notes. The coffee is a combination of Tabi and Yellow Colombia varieties from the Bruselas farm in Huila. It features notes of raspberry, apricot yogurt, green apple, vanilla, and brown sugar. Natural drying in the shade and final shaping in a silo (mechanical system) with a minimum resting period of 10 days.
