Sidra, Anaya, Colombia - Advanced Natural With Yeast
Summary
This Sidra from Finca Anaya, a 4.5-hectare family farm in Acevedo, Huila, Colombia, is cultivated by the Aranda Gómez family. The coffee undergoes an advanced natural process with yeast: fully ripe cherries are hand-selected, washed, and fermented anaerobically with wild yeasts for four days at 30°C, then sun-dried for 15-20 days. It offers a complex cup with notes of peach, cotton candy, blueberry, and honey, with great clarity and fruity sweetness.
