Ombligon, Anaya, Colombia - Advanced Washed With Yeast
Summary
Ombligon from Finca Anaya, a 4.5-hectare family farm in Acevedo, Huila, Colombia, cultivated by the Aranda Gómez family for over 30 years. This advanced washed lot undergoes a 24-hour fermentation in cherry, followed by 48 hours after depulping, then a submerged fermentation with selected yeasts and pre-fermented fruit mixture. The coffee is washed and slowly dried. Cupping notes include blueberry, strawberry, pineapple, mango, floral notes, and vanilla sweetness, with delicate yet high complexity and clarity.
