A Bourbon Ají coffee from Finca El Encanto in Pitalito, Huila, Colombia, produced by Franky Hoyos. Grown at 1,650 meters, processed with an Advanced Natural Thermo Shock method involving 70 hours of controlled oxidation, 60 hours of anaerobic fermentation with fruit-based yeast culture, thermal shock, and 48 hours of mechanical drying followed by 15 days of resting. Tasting notes include Hubba Bubba bubble gum, red fruits, blueberry, citrus fruits, with a candy-like and fruity character and bright sweetness.
