Colombia, El Diviso
Summary
A rare Ombligon lot from Néstor and Adrián Lasso of El Diviso in Bruselas, Pitalito, Huila, Colombia, grown at 1,700-1,900 MASL. The variety takes its name from ombligo (belly button), describing the cherry's unusual shape. The Lasso brothers apply a thermal shock process before a 38-hour anaerobic fermentation with yeast. The cup is quintessentially Huila, with bright cherry acidity and a smooth palate, enhanced by notes of candied strawberry and fruity sweetness.
