Un077 - Flying Pumas, Anaerobic Washed Geisha
Summary
This coffee comes from the Flying Pumas farm in the Volcan region of Chiriqui, Panama, near La Amistad Park. The farm promotes biodiversity and conservation, with one third dedicated to growing various varietals, Geisha being the most prominent. This lot, named Ocelot, is part of their Summit Reserve range and undergoes an anaerobic washed process: the cherry is anaerobically fermented in two stages (in cherry and in mucilage) before a traditional washed finish. The cup offers notes of pink grapefruit, redcurrant, and jasmine.
