Aquiares Mariana

Summary

A stunning anaerobic natural from the pioneering Aquiares Estate in Costa Rica. The estate, led by Diego Robelo, spans over 900 hectares with around 200 hectares of protected native forest. This lot features the Mariana variety, an F1 hybrid developed by crossing IAPAR 59 with an Ethiopian landrace, one of the world's first F1 hybrids that can be propagated from seed. Fully ripe cherries are fermented in sealed, oxygen-free tanks, then slowly dried as a natural on raised beds and patios. Tasting notes include candy, poached pear, and orange wine.
