La Isabel
Summary
La Isabel is a coffee from the Caballero Estate in Marcala, Honduras, produced by Marysabel Caballero and Moises Herrera. Grown at 1600 masl, the Catuai variety was anaerobically fermented for 72 hours before being thoroughly washed. The Caballero family runs a 200-hectare estate divided into 17 farms and the Xinacla wet mill, with a strong focus on sustainability, biodiversity and soil quality. The cup is sweet and elegant, with notes of lemon curd, brioche and honeysuckle.
