Red Sunset | Semi-washed Colombian Coffee Grown By Andrés Cardona
Summary
Red Sunset is a Colombian coffee grown and processed by Andrés Cardona at Finca La Ilusión, an eight-hectare farm in Santa Bárbara, Antioquia, at 1,522 masl. Varieties are Castillo and Colombia. The signature Red Sunset process is a submerged semi-washed fermentation using cherry juice saved from previous batches as the fermentation medium; beans are then depulped with some fruit left on and dried honey-style. Expected profile: black cherry, lychee, almond and a plush, syrupy body. Light roast.
